Ingredients

  • 1/2 kg of beef liver
  • Salt to taste
  • 1 pinch of pepper
  • 1 tablespoon minced garlic
  • 1 pinch of cumin
  • 1 lemon
  • 2 eggs
  • Vinegar
  • Buy

Liver Preparation

  1. We bought a 1 kg liver and cut it into very thin fillets. Then we season it in a pan with salt, pepper and drops of vinegar.
  2. We let it rest for a few minutes, we wash it and we season it again with salt, ground garlic, pepper, a pinch of cumin and a few drops of lemon.
  3. Then we pass it in flour and later in beaten egg. Finally in this process, we pass it through breadcrumbs that we crush well.
  4. Now we fry it in a pan with plenty of oil. Until it is completely cooked and ready! Time to enjoy!

To serve, we can accompany it with fried Isla plantains, fried egg, Creole sauce and a Tacu-Tacu made with yesterday's pallares, well grained white rice. To make it even more delicious, you can add a dry juice or stew to the bottom of the plate. Enjoy!

Tips for making a delicious Liver

  • I recommend you look for heifer livers, not very large or very dark in color. In this way you will find a unique flavor and not so pronounced.
  • When buying livers, you should make sure they are firm to the touch and avoid smelling bad. The livers when they are fresh have a dark reddish brown color, but if you notice that it is opaque, yellow or greenish, it means that it is decomposed and it is better to flee.
