Ingredients

  • 1/2 kilo of red onion
  • 2 tablespoons minced garlic
  • 1 tablespoon of ají panca liquefied
  • 1 cup of chopped tomato
  • 2 hard-boiled eggs, chopped
  • 2 cups ground beef steak (can also be ground beef)
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 pinch of oregano
  • 1 pinch of cumin
  • Paprika powder
  • 4 parsley leaves
  • 300 grams of raisins
  • Olives to taste and chopped hard-boiled egg

Preparation of rice covered with meat

  1. Make a dressing with 2 cups chopped red onion, two tablespoons of minced garlic, a tablespoon of blended ají panca and cook for 10 minutes.
  2. We now add 1 cup of finely chopped tomato and two cups of minced beef or ground beef. When the dressing takes point, add salt, pepper, oregano, cumin, a point of paprika powder and parsley. Finally we add two tablespoons of raisins, chopped parsley, we taste the salt and let it warm to finally add olives to taste and chopped hard-boiled egg.
  3. It's time to mold it with a layer of white rice and stuffing. Quite a filling and another equal layer of rice. It is removed from the mold and served with fried eggs and banana from the island.

For those who do not eat meat, we have the variant of rice covered with vegetables, where we replace the ground meat with half a cup of peas, half a cup of diced carrots, half a cup of minced green beans and half a cup of chopped corn, we add everything in the moment the meat is added following the covered rice recipe that we just gave you, we add 2 tablespoons of roasted peanuts to the dressing and that's it.

Tips for making a delicious rice covered with meat

When buying ground beef, note that the surface color is cherry red and not brown. that is the signal to know if it is fresh.
