Ingredients

  • 1 kilo of beef
  • 4 yellow potatoes
  • Salt and pepper to taste
  • 1 tablespoon minced garlic
  • 400 ml oil
  • 1 cup diced red onion
  • 1/2 cup finely chopped red pepper
  • 2 tablespoons of ají panca liquefied
  • 1 tablespoon of liquefied yellow pepper
  • 1 cup of tomato sauce
  • 1 pinch of oregano
  • Cumin powder
  • 1 sprig of rosemary
  • 2 parsley branches
  • 1 large carrot
  • 1 cup of peas
  • 1 hoja de laurel
  • 1/2 cup of red wine

Preparation of beef stew

  1. We choose a kilo of beef for stew, if it is with bone, look for strip roast in large pieces. If boneless choose brisket, shoulder, silverside roast, Russian roast, or cheek.
  2. We season it with salt, pepper and brown it with a splash of oil in a saucepan that is not very high and preferably with a thick bottom.
  3. We remove it and in that same pot, make a dressing with 1 cup of finely diced red onion. We sweat it for 5 minutes with half a cup of finely chopped red pepper, then we add a tablespoon of ground garlic. We sweat for a minute.
  4. Add two tablespoons of liquefied panca pepper and one tablespoon of liquefied yellow pepper. Cook for 5 minutes and add a cup of blended tomato and a little red wine.
  5. Bring to a boil adding salt, pepper, a pinch of oregano, ground cumin, 1 sprig of rosemary, two sprigs of parsley and 1 bay leaf.
  6. We return to the meat and add water to cover it over a very low heat for 40 minutes to an hour and a half depending on the cut chosen. When we feel it is about 10 minutes away, we add 1 large carrot cut into slices, a cup of green peas and 4 yellow potatoes cut in two. Of course, be careful that the yellow potatoes do not fall apart and cloud the sauce (we must not overcook them).
  7. Add two tablespoons of raisins, bring to a boil, taste the salt and that's it.

The ideal accompaniment is a little white rice.
