Ingredients

  • 4 corn
  • 2 tablespoons minced garlic
  • 5 red onions
  • 400 grams of liquefied yellow pepper
  • 500 grams of cilantro liquefied
  • 2 heads of Chinese onion
  • 300 ml oil
  • 100 ml of vinegar
  • 1 pinch of salt
  • 1 pinch pepper
  • 1 pinch of cumin

Preparation of Pepián de choclo

  1. We choose 4 corn which is no longer so tender, the ones that nobody else has, and we liquefy them.
  2. We make a dressing with a tablespoon of ground garlic and a cup of minced onion.
  3. Add half a cup of liquefied yellow pepper and cook for two minutes.
  4. Add half a cup of blended coriander and the blended corn. Let it cook by adding a cup of vegetable broth. It should be like a fluffy puree.
  5. Apart we make a quick pickle with a teaspoon of ground garlic, 1 red onion in thick strips, two heads of Chinese onion and more coriander. We jump fast in oil.
  6. Add a splash of vinegar and 1 tablespoon of liquefied yellow pepper, salt, pepper and cumin powder.
  7. We make a yellow rice with a little toothpick and that's it.

We serve our pepián, its pickled sauce on top, its rice on the side and if it is a carnivore it can be served with a meat stew or a piece of fried fish with its Creole sauce on top.
