When writing this delicious recipe for kidneys in wine, I remember my childhood with great nostalgia, when with the tip that I collected from my uncles, I would go on my bicycle to the neighborhood market, at that time to buy with my tip kidneys of beef, and I remember that I would return home with great joy singing . And when I got home I would run straight to the kitchen to prepare it in a frying pan with a little garlic, Chinese onion, cumin, pepper, lemon and butter. Recipe taken from Grandma's old book.

Today after 40 years I want, with many years already on me, I want to share with you my own and improved recipe very well kept under 4 keys of a delicious little kidney with wine. I assure you that it will be delicious!

La recipe for kidneys in wineIt is made from beef or beef viscera that is seasoned and browned under the melting of butter, then it is sautéed with minced onion, ground garlic, salt and pepper to taste. Ingredients

  • 1 kg of kidneys of calf or veal
  • 4 red onions
  • 125 grams of Butter
  • 1 tablespoon minced garlic
  • 1 teaspoon salt
  • 1 tablespoon flour
  • 1 pinch of pepper
  • 1 pinch of cumin
  • 1 pinch of sugar
  • 1 glass of red wine or pisco
  • Vinegar
  • Sal Island
  • 100 grams of chopped parsley

Preparation of Kidney to wine

  1. After choosing and buying a kilo of steer kidneys, we will soak it for an hour in water with a splash of vinegar and a handful of salt.
  2. After the hour, we wash it and then we open the kidneys to remove the nerves and internal fats. We immediately cut it into medium or large pieces
  3. In a frying pan we add a piece of butter and add the kidneys seasoned with ground garlic, salt and pepper. We sauté it over high heat for approximately 1 minute and remove them.
  4. In the same pan we add 2 cups of red onion cut into thin strips and one more piece of butter.
  5. We add a tablespoon of ground garlic, salt, pepper, cumin, a pinch of sugar and a tablespoon of flour. We let it cook for one more minute.
  6. Add a generous glass of red wine or pisco, letting it come to a boil.
  7. We return the kidneys with a splash of water if necessary and let everything cook for another 3 minutes.
  8. To serve, we add a good handful of chopped parsley and that's it! Time to enjoy!

I like to accompany this dish with a homemade yellow potato puree with a lot of butter. That little juice mixed with the puree is the best combination.

Tips for making a delicious Kidney with wine

  • When buying kidneys, make sure they are the freshest as they spoil more easily and quickly than the rest of the meat. It also requires special cleaning and cooking care.
  • It is advisable to soak the kidneys to eliminate their characteristic odor and subject them to a pre-cooking process.
