Ingredients

  • 1 turkey of 4 kilos chopped
  • 4 liters of water
  • 2 bottles of red wine
  • 2 medium onions diced
  • 4 medium tomatoes, peeled and chopped
  • 100 grams of butter
  • 1 liter of olive oil
  • 1/2 kilo of wheat flour
  • 12 dientes de ajo chopped
  • 36 peeled chestnuts (if they are not dried, soak the night before)
  • Aromatic herbs (bay leaf, basil, rosemary, thyme, sage)
  • 1 cinnamon stick
  • 6 cloves
  • Salt and pepper

Preparation of Turkey with wine and chestnuts

  1. In a large deep-bottomed pot, pour the water, wine bottle, aromatic herbs, cinnamon, and cloves. Let it boil for a few minutes.
  2. Now in a pan, heat the oil and fry the seasoned and floured pieces of turkey, leaving them well browned. Drain them and put them in a saucepan that you will have over very low heat.
