Ingredients

  • 1/2 cup of oil
  • 1 teaspoon minced garlic
  • 1 red onion
  • 2 tablespoons of aji mirasol
  • 2 tablespoons of ají panca
  • 2 tomates
  • 3 large potatoes
  • 1 tablespoon tomato paste
  • 1 pinch of oregano
  • 1 bay leaf
  • 2 dried mushrooms
  • 2 yellow peppers
  • 2 cups of tripe cooked
  • 1/2 cup of carrot cooked
  • 1/2 cup of cooked peas
  • Salt and pepper to taste

Preparation of Mondonguito a la Italiana

  1. We pour a jet of oil into a casserole, immediately add a teaspoon of minced garlic and a very finely chopped onion, add two tablespoons of ají mirasol and another two of ají panca, both blended.
  2. Season for a few minutes and add two very finely chopped tomatoes, a tablespoon of tomato paste, a pinch of oregano, 1 bay leaf, 2 soaked dried mushrooms and stir.
  3. Now add 2 yellow peppers and a red onion cut into thin strips and two cups of tripe cooked until it is soft, also cut into strips.
  4. Add a little broth, taste the salt, pepper and let everything come to a boil for 5 minutes until the flavors are mixed.
  5. Now add half a cup of cooked carrot cut into sticks and half a cup of cooked peas. Next we add chopped parsley and potatoes cut into previously fried sticks. We finish by adding a handful of grated Parmesan and voila! To serve!

Tips and secrets to make a delicious Italian Mondonguito

  • I advise you to add a piece of Huacho sausage and another of filling to the plate, as if to get out of the routine, but do not abuse.
