Preparation of the carbonara macaroni

  1. We will start by getting all our ingredients ready. We will chop the bacon into julienne strips, the onion and the garlic will be finely chopped.
  2. We will take a pan where we will apply the two tablespoons of butter to melt it, and we will add the chopped onion along with the garlic so that they are blanched.
  3. Then we can add the bacon and let it brown for a few minutes. After they have browned a little and the fat has been extracted from the bacon, we can add the milk cream, where we will cover the pan and leave it on low heat.
  4. In a container we will boil the macaroni with water and salt.
  5. Besides, we will take the yolks and the grated cheese, with a pinch of salt and pepper, to integrate them very well.
  6. Once the macaroni are cooked and ready, we will drain them and then pour over them, the cheese mixture and the yolks, these will be cooked with the heat of the pasta.
  7. Then we will take the pasta integrated with the mixture of the yolks and we will place it in the pan with the sauce. We will stir it very well so that all the macaroni are impregnated.
  8. We serve the macaroni carbonara, and ready to taste.

To save time in preparation, it is best to heat the water where we will boil the macaroni when starting to prepare the sauce.
The traditional carbonara sauce is not prepared with milk cream, only with the yolk of the eggs. So you can skip the heavy cream to try the original version.
Once the sauce is well cooked, do not turn it off, keep it on a low heat so that it is at an ideal temperature when integrating and serving the pasta.
