Ingredients

  • onion
  • 1 eggplant
  • 8 green asparagus
  • 1 Zucchini
  • 1 red pepper
  • 1 green pepper
  • 1 Tomate
  • 2 pinches of salt
  • 2 tablespoons olive oil
  • 1 pinch of black pepper
  • Provencal herbs

Preparation of grilled vegetables

  1. To begin, we will take the onion, peel it and cut it into slices, it is good to cut them not so thin so that they keep their shape and are more tasty.
  2. We will take the eggplant, the zucchini and the tomato, we will wash them very well and we will cut them into slices like the onion, with a thickness of approximately ½ cm
  3. We will wash the 2 peppers well and cut them into julienne strips. We will leave the asparagus whole.
  4. On a non-stick iron it is not necessary to apply oil, but if you do not have it, then we will apply a splash of oil in the center and spread it over the entire surface with the help of absorbent paper. We will proceed to heat it.
  5. Once the griddle is hot, we will place the vegetables without overlapping, so that the cooking is even. In case there is not enough space, you can do this step in 2 parts.
  6. After 2 minutes have passed, we will turn the vegetables so that they cook well on the opposite side. We can add Provencal herbs to vegetables. We will let them cook for about 3 more minutes.
  7. Then we serve on a plate and we can apply a little olive oil, salt and pepper and that's it.

Tips and cooking tips to prepare grilled vegetables

Make sure you have fresh vegetables, without any spots or bruises.
When you cut the onion, make sure that the cuts are perpendicular to its axis, so that the slices can come out properly.
With the olive oil, we can prepare a dressing by adding garlic and oregano, crushing them in a mortar before applying it on the vegetables.
If you don't have a griddle, you can use a large skillet.
