Ingredients

  • 1/2 kilo of lentils
  • 1/2 carrot chopped
  • 1 cup olive oil
  • 4 white potatoes, peeled and chopped
  • 1 large onion, diced
  • 1 tablespoon minced garlic
  • 1 tablespoon of ground green chili
  • 1 sprig of coriander (coriander)
  • 1 pinch of cumin
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 bay leaf
  • 1 tablespoon tomato paste
  • 1 teaspoon oregano

Lentil stew preparation

  1. In a pot we make a dressing with a tablespoon of minced garlic and a cup of finely chopped onion. We add a quarter cup of fried chopped bacon, this of course is optional. You can also add a piece of smoked rib of those that they sell in the markets.
  2. Now add a teaspoon of tomato paste, salt, pepper, cumin, bay leaf and oregano, all to taste. Then add half a carrot, peeled and finely chopped. Finally a splash of meat or vegetable broth or water. We bring to a boil and taste the salt.
  3. Add half a kilo of lentils previously soaked to the pot. We cook until everything is tasty and slightly thick. At the end we taste the salt once more, add a drizzle of olive oil and that's it, we mix it all we like.
  4. To serve, accompany it with white rice and a Creole sauce. I love to combine lentils with fried fish, and among the fried fish, a cojinovita, although of course, for many reasons, it is more scarce every day. Enjoy!
