Ingredients

  • 4 chicken breasts
  • 1 cebolla
  • 2 leeks
  • 100 grams of dried figs
  • 1 glass of port
  • 1 hoja de laurel
  • 1 glass of vinegar
  • 1 cup olive oil
  • Pepper grains
  • Salt to taste

Preparation of Christmas Pickle

  1. The day before preparing the Christmas Pickle, put the figs to soak in the port.
  2. In a pan, fry the finely chopped onion and leeks in olive oil, until you notice that they are transparent.
  3. Now add the chicken breasts, the bay leaf, some peppercorns, the vinegar and the port from the maceration. Cook over low heat until the breasts are very tender.
  4. Add the drained figs, check the salt and finally cook for another five minutes and that's it! Serve it with well-grained white rice and Ocopa sauce. Enjoy!
