Preparation of egg broth

  • Start with making a beef or chicken broth, if you don't want to add a dehydrated broth from those you find in the market.
  • In a pot, boil a cup of water together with the chives, the previously prepared broth and salt.
  • Peel and slice the potatoes. Add to broth.
  • Add one whole egg and the white of the other.
  • Since the egg that we poured into the broth has boiled and is cooked, add the preparation of the milk with the yolk from the previous step.
  • Leave on the heat and turn off before it boils again.
  • Serve with chives and chopped cilantro on top and accompany with arepas, bread, with an excellent avocado or with rice.

When adding each egg to the broth, make sure that the eggs are fresh, you have two ways to verify it. One way is to crack the egg and pour it into a cup or plate and observe that the yolk is not broken and that the egg white is the correct consistency, if all is well then incorporate it into the egg broth. Another way is to put each egg in a glass with water, if the egg floats completely you must discard it, if the egg is in good condition it must remain at the bottom of the glass.
