Allow me to present you this delicious recipe for Chicken aguadito. One of the few dishes of our Peruvian cuisine that most help us heal the body and soul, nostalgia or an open wound. The secrets are really few, surely everyone knows how to make a little aguadito, a good dressing, a good broth and above all have patience and love to prepare it.
Chicken Aguadito Recipe
Ingredients
- 1 kilo of chicken rumps, necks and feet
- 200 grams of chicken breast
- 4 cups of cooked rice
- 2 yellow potatoes
- 1 pinch of salt
- 1 pinch of pepper
For the dressing
- 2 finely chopped red onions
- 1 tablespoon minced garlic
- 1 cup of yellow chili pepper liquefied
- 1 pinch of cumin
- 1 cup of cilantro blended
- 1 cup of chicha de jora
- 1/2 cup of raw shelters
- 1/2 cup carrot chopped
- 1/2 cup of chopped pumpkin
- 1/2 cup of cup of shelled corn
Preparation of Chicken Aguadito
- In a large pot with enough water, we add a kilo of chicken rumps, necks and feet to make a succulent concentrated broth.
- While cooking, we prepare a dressing with two finely chopped red onions, 1 tablespoon of ground garlic, a cup of blended yellow pepper, and a pinch of cumin. Cook for 15 minutes.
- Add blended cilantro and cook for 5 more minutes. Then we add a touch of chicha de jora, 4 cups of concentrated broth that we have made, half a cup of raw shelters, half a cup of chopped carrot, half a cup of chopped pumpkin and half a cup of shelled corn.
- Boil for about 10 minutes and add a cup of large cubes of chicken breast and another cup of large cubes of skinless chicken leg.
- Finally we add 4 cups of cooked rice and 2 cooked yellow potatoes cut in two. We let it thicken and take a point. We taste the salt and pepper. Add more chopped cilantro, a few drops of lemon, chili pepper or chopped hot pepper and that's it. Time to enjoy!
