Ingredients

  • 1 kilo of beef lung
  • 4 white potatoes
  • 2 sprigs of peppermint
  • 100 ml oil
  • 2 finely chopped red onions
  • 1 hot pepper
  • 1 tablespoon minced garlic
  • 2 tablespoons of aji mirasol
  • 1 cup of ají panca liquefied
  • 1 pinch of salt
  • 1 pinch of oregano powder
  • 1 pinch of cumin
  • 1 pinch of bell pepper

Chanfainite Preparation

  1. We wash a kilo of beef lung very well.
  2. In a pot with plenty of water, cook it over medium heat for 10 minutes with two good sprigs of fresh mint.
  3. After 10 minutes, we remove it, chop it into cubes and save the broth.
  4. Prepare a dressing with a splash of oil, 2 finely chopped red onions and a good tablespoon of minced garlic. Let it simmer for 10 minutes.
  5. Add a cup of liquefied ají panca and 2 tablespoons of ají mirasol. We cook for 10 more minutes. And then we add the chopped lung. Cook for 1 minute and add four diced white potatoes equal to the lung.
  6. We cover everything with a little of the reserved broth. We add a pinch of salt, 1 pinch of oregano powder, eaten and pepper. We cook until the potato is cooked.
  7. Add two sprigs of mint and two slices of hot pepper. And we let everything rest for 5 minutes. (Optionally you can add a handful of finely chopped Chinese onion).

To accompany it, place around the chili pepper, huacatay cream, cancha, mote, white rice, whatever you like the most.
