Cau Cau Recipe
La Cau Cau recipe It is prepared based on its main ingredient, which is tripe. The mondongo like many of the visors, it actually has almost the same amount of protein as any other meat and it also has iron, then we must always include it in the menu and forget that this can raise cholesterol or be bad for health, on the contrary, it is part of a healthy diet.
Ingredients
- 1 1/2 kg of tripe
- 2 large white potatoes
- 1 tablespoon minced garlic
- 1 cup of chopped red onion
- 1 cup of yellow chili pepper liquefied
- 1 sprig of peppermint
- 1 pinch of salt
- 1 pinch of white pepper
- Cumin to taste
- Toothpick to taste
Preparation of Cau Cau
- We start by boiling the water and add a kilo and a half of tripe for at least 15 minutes. We will see that it is ready when you can cut it with your hands with ease.
- Then we make a dressing with a tablespoon of ground garlic, a cup of chopped red onion, a cup of blended yellow pepper, salt, white pepper, cumin and toothpick to taste.
- We let the aroma of this dressing permeate the environment for 15 minutes and then we add the chopped tripe with a jet of its cooking broth.
- Let cook a few more minutes so that the dressing and tripe mix well.
- We add two large white potatoes or four medium ones cut into cubes, plus freshly chopped mint.
- When the potato is cooked, we taste the salt, add chopped mint and let it warm for a little more so that everything takes on flavor. We serve with its white rice and that's it! Enjoy!
Tips and secrets to make a delicious Cau Cau
- When buying the mondongoMake sure it is cool and does not smell too strong, its color should be white and bright. Remember that good cooking is only possible with good ingredients 🙂
- When you finish the preparation, add 2 tablespoons of raw liquefied yellow pepper with a slice of ají limo and a drop of lemon, delicious!
