Ingredients

  • 8 caiguas
  • Salt and pepper to taste
  • 1 cup onion, minced
  • 2 dientes de ajo chopped
  • 1/4 cup of ají panca liquefied
  • 200 grams of peanuts
  • 300 grams of raisins
  • 1 raw egg
  • 1 boiled egg
  • 4 chopped black olives

Preparation of Caigua Rellena

  1. We put half a kilo of caiguas to cook in a pot with plenty of water for an approximate time of 10 to 20 minutes, until they are completely cooked. They are then rapidly cooled in ice water.
  2. We prepare the filling with that beef, which is not ground, but is chopped with a knife and stewed in a dressing made slowly with a lot of onion, a little garlic, a little liquefied panca pepper and a peanut point finish.
  3. Then we fill the Caigua with that previously made stew, which, seasoned with salt, pepper and cumin, is ready to add its raisins, its eggs and its olives.
  4. Now we prepare the caiguas to be stewed again in 15 minutes over low heat and that's it!
  5. To serve, we can accompany the caigua with its white rice or some boiled potatoes.

Tips for making a delicious Caigua Rellena

At the end of preparing the stew, I add a little evaporated milk, mix it well, bring it to a boil and the caiguas sauce is ready.
