Ingredients

  • 4 beef tenderloin fillets of 200 grams
  • 1/2 kilo of joint noodles or thick spaghetti
  • 1 pinch of salt
  • 1 pinch of pepper
  • 5 cloves of garlic
  • Lemon drops
  • 500 grams of unprepared flour
  • 5 eggs
  • 400 grams of ground bread
  • 1 cup basil leaves
  • 2 cup spinach leaves
  • 1 red onion
  • 200 grams of grated fresh cheese
  • 100 ml of evaporated milk
  • 1 tablespoon of Parmesan cheese

Preparation of Apanado with green noodles

  1. We start by crushing 4 200-gram beef tenderloin fillets and season them with salt, pepper, a pinch of garlic and lemon drops.
  2. We first passed it through a bowl full of flour, then another with beaten egg and finally another with ground bread.
  3. We crush well and reserve it in the refrigerator.
  4. Blend a cup of basil leaves, 2 cups of spinach leaves and 4 cloves of garlic.
  5. In a pan we sweat a finely cut red onion for 5 minutes.
  6. Add the blended mixture, cook for a minute and add grated fresh cheese to taste, evaporated milk, salt, pepper and Parmesan cheese. We let it make a point.
  7. Meanwhile, we boil plenty of salted water in a pot and cook half a kilo of joint noodles or thick spaghetti. We leave it slightly al dente.
  8. We assemble our source by mixing the green sauce with the noodles.
  9. We place the breadcrumbs on top, which we brown quickly in a pan and also add a splash of sauce huancaina around and go!
