Ingredients

  • 4 white potatoes
  • 4 yellow potatoes
  • 2 cups of red onion
  • 1 cup of cooked beans
  • 2 tablespoons minced garlic
  • 1/2 cup of liquefied yellow pepper
  • 300 ml of evaporated milk
  • 200 ml oil
  • 1/2 cup of fresh cheese cut into cubes
  • 1/2 cup of huacatay
  • 1/2 cup cilantro
  • Minced peppermint
  • 1 hot pepper
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 pinch of cumin

Preparation of Ajiaco de papas

  1. In a pot, add 2 cups of finely chopped red onion and cook it over low heat with a splash of oil. Cook until it looks transparent.
  2. Add two tablespoons of ground garlic and cook slowly until the garlic aroma settles. Then it's time to add half a cup of fresh yellow chili blended with veins and seeds, with everything.
  3. We cook until the whole is separated (that is, it is cut), that after cooking so much it is seen that the fat is going on one side and the dressing on the other, the base is already ready.
  4. Now we add 4 large white potatoes that we cut into small cubes and 4 yellow potatoes that we cut into slightly larger cubes. We stir and add a cup of cooked beans and a cup of vegetable or chicken broth, enough to cook the potatoes. We gently stir the mixture for a while.
  5. We add a pinch of salt, pepper, cumin and cover. Cook, stirring gently with a wooden spoon to make a kind of porridge with pieces.
  6. To finish we add a good jet of evaporated milk, half a cup of diced fresh Serrano cheese, half a cup of huacatay, half a cup of chopped coriander and mint, plus a slice of hot pepper to give it a tasty aroma. Let it rest for 5 to 10 minutes and it will be ready to be taken to the table to eat with white rice, Creole sauce or some fried eggs if you like. Advantage!
