Stuffed Potato Preparation
- We start by combining 4 large cooked white potatoes with a yellow potato that helps give it color, texture and flavor.
- We go through the hot potato press and then we knead it by hand adding an egg, salt and pepper until smooth.
- We will make the filling with half a kilo of minced steak or ground meat. In a frying pan, we sweat it with a finely chopped red onion, a pinch of ground garlic, 1 tablespoon of liquefied chili pepper, salt, pepper, cumin and oregano, with its small piece of egg, its raisin and its olive at the end.
- Before filling it into the potato dough, put flour in your hands, stretch it out on the palm and put a generous portion of filling, closing it in an oval shape.
