Ingredients

  • 50 grams of silverside fillets
  • 50 grams of squid
  • 50 grams of fan shell
  • 50 grams of fish scrap
  • Salt to taste
  • Pepper to taste
  • 1 garlic clove
  • 4 tablespoons of rocoto liquefied
  • 2 branches of coriander
  • 1 stalk of celery
  • 1/4 onion
  • 1 chili pepper without veins or seeds
  • 1/2 hot pepper without veins or seeds
  • 3 cups of lemon juice
  • 1 pinch of kion

Preparation of tiger milk

  1. We start by mincing 50 grams of silverside fillets or any fresh fish. In addition, 50 grams of squid previously passed through hot water and 50 grams of the seafood that you like the most: scallop, snail, clam, Lampa, chanque, sea urchin, prawn, shrimp. Whichever is chosen, this amount is per glass.
  2. Besides, we blend for four glasses, 50 grams of a piece of fish, salt, pepper, a clove of garlic, two branches of coriander, a stalk of celery, a quarter of an onion, a chili pepper without veins or seeds, half a hot pepper without veins no seeds and 3 cups of lemon juice. If you like, you can add a pinch of kion. Blend well, strain and add 4 tablespoons of blended hot pepper.
  3. We taste the salt and add the chopped seafood. Now add onion, ají limo and chopped cilantro to taste. We taste the salt and lemon again. It must be acidic, spicy and salty. We finally add shelled corn and corn. And ready!

Some like to add a splash of evaporated milk. If it gets too warm or salted too much, a piece of ice helps balance everything, temperature, acidity and salt.
