Tips for making a delicious black shell Ceviche

In case you cannot get black shells, go ahead and do the same with a similar variety that comes from southern waters and that local fishermen call Mejillones. They are not mussels, they are like black shells but pinkish brown, their flavor is very similar.

Before preparing the black shells it is very important to make sure that they are fresh and in good condition. It is enough that a single shell is spoiled for it to infect the others and spoil the entire preparation. Check that they are tightly closed when you buy them and with a pure sea smell.
