Ingredients

  • 1/2 kilo of white rice
  • 4 tablespoons of oil
  • 2 cups red onion, chopped
  • 1 tablespoon minced garlic
  • 2 tablespoons Chinese onion head, minced
  • 1/2 cup of liquefied yellow pepper
  • 1/4 cup of ají panca liquefied
  • 1/4 of cup of red pepper, chopped
  • 1/4 of cup of yellow chili pepper, minced
  • 1 cup of cooked peas
  • 1/2 cup of cooked corn, shelled
  • 1/4 of cup of coriander
  • 200 ml of white wine
  • 2 dozen mussels
  • 12 prawn tails
  • 12 small fan shells
  • 1 Cup of raw squid, peeled and cut into strips
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 pinch of cumin
  • 1 pinch of oregano

Seafood Rice Preparation

  1. We start preparing the dressing in a large frying pan, add 4 tablespoons of oil along with two cups of finely chopped red onion.
  2. Let it sweat over low heat for a minute and add a tablespoon of ground garlic and two tablespoons of chopped Chinese onion head. We sweat for a minute and add half a cup of blended yellow chili and a quarter cup of blended chili pepper. Let it sweat for 5 minutes and add a pinch of salt and pepper and a pinch of cumin and toothpick or turmeric and a pinch of oregano. Ready the dressing!
  3. Now add a quarter cup of chopped red pepper, another quarter cup of chopped yellow pepper, a cup of cooked peas, half a cup of cooked shelled corn, a quarter cup of coriander and finally a splash of white wine and a cup of mussel broth. The latter is prepared with two dozen mussels that we will cook previously well washed with a cup of water in a covered pot until it opens.
  4. Let us remember that the rice is already cooked and that what we want is a dry and slightly fatty rice. Let everything boil for 5 minutes.
  5. Once the mixture is ready, we add 5 cups of cooked white rice, we allow the rice to absorb a little of the juice and we add the seafood. First 12 prawn tails, 12 small fan shells and a cup of raw squid, peeled and cut into strips. And last the two dozen mussels the broth already without its shell.
  6. We reserved 4 mussels and 4 shells with their shell. We leave a couple more minutes over high heat for the flavors to mix. We taste the salt and squeeze a lemon and that's it.
