This is an original recipe from Peru and it is an important part of its traditional dishes, it has also spread to the rest of the Andean countries so that it has been assimilated as its own in several of them.

Ingredients

  • ¾ kg. Medium-sized shrimp
  • 2 heads of cojinova
  • ½ kg. Cojinova fillet
  • ½ kg. Green pea cup
  • ½ cup green beans, peeled
  • 3 tablespoons of rice
  • 100 grs. Fresh cheese (goat or cow)
  • 2 tablespoons tomato sauce
  • ¼ kg. Very red and fresh tomatoes
  • 1 medium onion head
  • ½ kg. Yellow potatoes
  • 1 tablespoon garlic ground
  • ¼ teaspoons of allspice
  • Salt, pepper, cumin and oregano, convenient amount.
  • ¼ cup oil
  • 1 cup of evaporated milk
  • 2 sprigs of coriander

Shrimp Chupe Preparation

  1. Wash the shrimp well in plenty of water and let them drain in a separate strainer. The same is done with the cojinova heads and they are placed in a pot with 2 and ½ liters of water when they are boiled, the heads are removed and crushed, straining the broth to avoid thorns or scales.
  2. In addition, the dressing is prepared with ground garlic, pepper, cumin, oregano and salt, it is fried well in 3 tablespoons of oil, when this dressing is properly fried, add the broth, the peeled and halved yellow potatoes, then the beans, peas and rice, letting them boil for 5 minutes, checking from time to time the cooking of the ingredients and the seasoning of the broth, again add the washed shrimp, let it boil for another 5 minutes,
  3. And finally, loa cushion fillets cut into 8 portions are added, again the state of cooking of shrimp and fish is checked. To add the milk, cilantro and some salt, wait for a new boil and test the seasoning and knowledge, to remove the pot from the heat, leaving it to rest for a while, before serving it.

Tips for making a delicious Shrimp Chupe

Before starting the recipe, it is best to have shrimp broth, you can do it using the heads and skin of the same shrimp that you will use in the preparation.

Another even easier way is to use packaged seafood broth, which you can get in supermarkets.

The original recipe includes eggs that are poached in the broth, this ingredient can be dispensable if you want.

In other Latin American countries white cheese cubes are added, you can add this ingredient to try other foreign versions of the same dish.

The spicy is an ingredient that you can omit from the recipe, or put it separately on the table, so that it can be used to taste.
