These two ingredients already appear in several old cookbooks from the XNUMXth century, only that it differs a lot from the recipe that we know today, in fact, the first causes not only lacked filling but also did not include lemon, instead the sour orange was used, the same citrus that was used at that time to prepare Ceviche. In this opportunity I present my recipe for Causa Limeña, in the style of MyPeruvian Food. Hands to the kitchen!

Ingredients

  • 1 kilo of yellow potatoes
  • Vegetable oil
  • Mayonnaise
  • 4 large lemons
  • 3/4 of cup of yellow chili pepper liquefied
  • 2 cans of canned tuna
  • 2 avocados
  • 2 fresh tomatoes
  • 2 boiled eggs

Preparation of Causa Limeña

  1. We started this recipe from Lima, by boiling a kilo of yellow potatoes with their skin, until they are completely cooked. Then we peel them and go through the potato press while still hot. Then we add salt and 4 tablespoons of vegetable oil. Knead and let cool.
  2. We add the juice of a large lemon or two small ones. Now add three-quarters of a cup of liquefied yellow pepper and knead again with clean hands very soft.
  3. We proceed to divide it into two parts, place the first half in a mold like a first floor, add a layer of classic mayonnaise, place chopped tomato, on top of it shredded tuna or cooked and shredded chicken breast. On top of it are slices of avocado, slices of hard-boiled egg and finally we cover with the other half of the masa dough.
  4. Decorate as we like, with chopped egg and mayonnaise dots, covered with Huancaína sauce. And ready! Time to enjoy!
