Ingredients

  • 1/2 kg sweet potato
  • 1/2 kg grated raw cassava
  • Cinnamon or a few grains of anise.

Preparation of Bolitas a la huancaína

  1. We are going to prepare delicious Bolitas a la Huancaína with fresh and affordable ingredients: We wash the sweet potatoes well and put them to boil in a cool pot. At full boil, add the cinnamon or the anise seeds.
  2. When the sweet potato is parboiled, in a separate container we peel the skin and press it with the potato press or also with our hands. We include the grated cassava, to later form balls with the resulting dough.
  3. In a pan over medium heat, pour the oil and leave it for about 5 minutes to heat well. Then introduce the balls of the dough. Fry it until they look golden brown.
