El Fish stew It is not a soup, nor is it a stew, it is what its name indicates, a sweaty. A lot of liquid is added to the soup so that the ingredients swim in it. The stew is cooked for a long time so that at the end its ingredients become textured. Sudado requires no added broths, your own juices will take care of everything. Fish Sweat Recipe
Ingredients
- 4 large pieces of very fresh fish (conger eel, cabrilla or grouper)
- 1 finely chopped red onion
- 1 tablespoon minced garlic
- 1 cup of liquefied yellow pepper.
- 3 tomates
- 1 yellow pepper cut into thick strips
- 2 heads of Chinese onion cut in two
- 4 branches of coriander
- 1 slice of hot pepper
- Salt and pepper to taste
- 1/2 cup of chicha de jora
Preparation of Fish Sweat
- In a wave frying pan we make a dressing by sweating a few drops of oil, 1 finely chopped red onion, a tablespoon of ground garlic and a cup of liquefied yellow. We leave for 5 minutes and top with a red onion, a tomato and a yellow pepper, all cut into thick strips.
- We add two heads of Chinese onion cut in two lengthwise. 4 branches of coriander and a slice of red hot pepper, on top we place 4 large pieces of very fresh fish seasoned with salt and pepper, preferably fish that have a lot of gelatin such as conger eel, cabrilla, grouper, cheetah or hake. - Cover with another onion, 2 tomatoes, 1 chili pepper, the head of a Chinese onion and cilantro branches, all cut in the same way. We sprinkle halfway with the best chicha de jora you can find. We add salt to the liquid and cover. Let everything cook over a very low heat for about 10 minutes.
- We uncover and give a little movement. We taste the salt, add an additional slice of hot pepper and voila!
