Preparation of roast ravioli

  1. Let's start by preparing the dough, with half a kilo of unprepared flour, three eggs, salt and a drizzle of olive oil. Next we place eggs, salt and oil in the middle of a volcano of flour.
  2. We mix the oil and the eggs and begin to pull the flour to the center. We knead and knead. We form a ball, cover, rest for half an hour and stretch as it causes us. This dough can be used for ravioli, cannelloni or lasagna.
  3. To make the filling, we make a stew, whichever you like the most. Take the recipe you prefer. We separate the meat from the sauce and chop it finely.
  4. We mix it in a bowl and add a cup of ricotta cheese and half a cup of Parmesan cheese.
  5. We knead everything well and fill the ravioli, which we will have stretched before with the rolling pin or with the pasta machine.
  6. We close well with another layer of dough, marking with an egg previously around the filling.
  7. We press well again around the filling with the mold of our choice (if you do not have a mold, do it with your fingers)
  8. Sprinkle flour on top once the 2 layers are sealed.
  9. We cook the ravioli in plenty of salted water, while we heat the sauce of the stew, to which we will add a good piece of butter.
  10. We drain the ravioli and add a drizzle of olive oil. Then we place them in a bowl and bathe them with the sauce. On top of it abundant grated cheese.
