Ingredients

  • 1 kg of beef tongue
  • 2 stalks of celery
  • 2 cloves of garlic
  • 2 red onions
  • 1 tablespoon minced garlic
  • 1/2 cup of ají panca liquefied
  • Salt to taste
  • Pepper to taste
  • Cumin to taste
  • 1/2 kilo of white potato cut into cubes
  • 1/2 cup peas
  • 1/2 cup of green beans, chopped
  • 1/2 cup carrot chopped
  • 1/2 cup of tender beans
  • 1 red bell pepper, cut into strips
  • 1 pinch of oregano
  • 1 hot pepper hot pepper
  • 1 branch of parsley
  • 1 branch of coriander

Preparation of Spicy tongue

  1. In a pot we cook the tongue that we will have previously seasoned with plenty of salt and rested in the refrigerator during the morning.
  2. We wash it and cook it in water with peppercorns, celery sticks, garlic cloves and an onion. When it is soft, we remove it, peel it and let it cool.
  3. In a pan we make a dressing with a finely chopped red onion, a tablespoon of ground garlic, half a cup of blended chili pepper, salt, pepper and cumin to taste.
  4. Add the tongue cut into cubes (2 cups are fine), a cup of white potato cubes cut in the same way, half a cup of peas, half of chopped green beans, half of chopped carrot, half of tender beans, a cut red pepper in strips, pinch of oregano, a slice of hot pepper and a branch of parsley and another of coriander.
  5. We let it cook until the vegetables are cooked. We taste the salt and voila. If you like a few drops of lemon at the end. Enjoy!
