Ingredients

  • 1 farm turkey
  • 20 French onions
  • 20 dried figs
  • 250 grams of liver
  • 150 grams of butter
  • 1 cup olive oil
  • 1/2 liter of meat broth
  • 1/2 liter of white wine
  • 2 large onions
  • 4 cloves of garlic
  • 2 slices of bacon
  • 1 glass of milk
  • 2 tablespoons of breadcrumbs
  • 1 branch of parsley
  • Salt and pepper

Christmas Turkey Preparation

  1. Let's start preparing the filling, cut the liver into four pieces. Chop the onions, garlic, cut the bacon into strips and sauté everything in a pan with olive oil. Mix this sauce with milk, parsley, and bread.
  2. Stuff the turkey and sew it with wick so the stuffing doesn't try to overflow. Stick bits of butter between the skin and the turkey meat mixed with herbs.
  3. Put butter or oil in a roasting pan and brown a little of the turkey, especially on the thighs, let it cook for an hour.
  4. Now add the peeled French onions and cook for another hour, when the turkey is tender take it off the heat along with the onions, reduce the sauce with the meat broth and finely crushed figs to thicken.
  5. It's time to serve the turkey! In a platter, place the turkey surrounded by the onions and a sauce of your choice. I recommend you accompany it with a rich Ocopa sauce. Delicious. Enjoy!
