Ingredients

  • 10 pork or mutton chops
  • 200 grams of bacon
  • 1/2 liter of tomato puree
  • 1/2 kilo of potatoes
  • 1/2 kilo of vegetables to taste
  • Chopped onion to taste
  • Ground pepper to taste
  • Ground garlic to taste

Preparation of Christmas Eve Chops

  1. In a pan, season half the bacon for a few minutes and add the chopped potatoes just to get a little brown and then remove it from the heat.
  2. In a different pan, fry the rest of the bacon and add the chopped onion and continue frying until you see the transparency of the onion (very important to see that the onion takes a certain transparency, it is a good indicator of cooking).
  3. Now add the tomato puree, garlic and pepper. Stir slowly and wait for it to come to a boil, then remove it from the heat.
  4. In a refractory ovenproof container, generously place the chops, on top of the chips (potatoes) with the bacon from step number 1, distribute the bristles and at the end add the tomato sauce from step 2.
  5. Now cover the refractory container with aluminum foil and bake at medium heat for approximately 40 minutes or until the potatoes are well cooked and that's it! Let it rest for a few minutes and serve it. Enjoy!
