Ingredients

  • 1 kilo of cushion
  • 1 cebolla great
  • 6 yellow peppers
  • 3 large garlic cloves
  • Salt, pepper to taste
  • A little cumin
  • 1 kilo of potato
  • ½ cup of oil
  • 2 tablespoons of mint

Preparation of Cau Cau de Cojinova

Well friends to start with our Cau Cau we will do the following:

First, we chop our fish into small squares, season it with salt and pepper to taste, you can also add garlic, then we will use a pan (make sure it is large) to which we will add ½ vegetable oil and fry it until it looks golden, that will take about 2 minutes. 

On the other hand, we grind our 6 yellow peppers and chop the onion into small pieces, as well as the 3 garlic cloves and the good herb, you can leave it whole if you like, then in a pan we will proceed to place the ½ of vegetable oil or of olive (the one you want) to place the already chopped ingredients in the pan, after the oil is already hot, and we will season them with salt, pepper and the cumin that you want to taste, let it fry, stirring continuously over medium heat , until you see it very golden.

Then we proceed to peel the potatoes, to chop them into small cubes and add them to our stew, we also add a glass of boiling water and if you wish you can add a little more salt and pepper to your liking. Let it cook for about five minutes until the potato is medium, it should not necessarily be fully cooked. Then you add the fish and leave it for 5 more minutes.
