  • 100 grams of roasted peanuts, ground
  • 1 tablespoon minced garlic
  • 1 tablespoon of ground red pepper
  • 1 tablespoon of ground yellow pepper
  • ¾ cup of cabrilla broth
  • ¼ cup evaporated milk
  • 1 chopped onion
  • Cumin, salt and pepper.

Preparation of Cabrilla in Peanut Sauce

Very good to start, we will do the following folks:

We will clean the ½ kilo of cabrilla, we open it by removing the entrails and then we will remove the scales.

Now we go on to season it with a little salt, cumin and pepper to taste. And if you wish, you can add a little lemon juice and we will let it rest for approximately 10 minutes.

Once the time has passed, we will pass the cabrilla through flour completely, that is, on both sides. We will use a frying pan to which we will add a lot of oil (a good amount), we hope it is hot enough and we add our cabrilla, until it browns and you see that it is sufficiently cooked.

For the delicious peanut sauce, we will do the following:

We will chop an onion in small pieces, and we will take it to a frying pan to which we will previously add a little oil. And we will incorporate the rest of the seasonings, which are, 1 tablespoon of ground garlic, 1 tablespoon of ground red pepper, 1 tablespoon of ground yellow pepper, and we will fry it until the onion browns.

Then on a baking sheet, we will place the 100 gr of peanuts, and we will heat the oven to about 180 ° C, and wait for it to heat up. Now ready, we put the tray in the oven, leaving the peanuts for about 6 to 8 minutes. After time we take them out of the oven and begin to remove the peel, and then grind it until it is a powder, you can do it in a blender or if you have a better food processor.

Once this is done, we will mix the processed peanuts with ¾ cup of cabrilla broth and we will mix it in the pan with the seasonings that we had previously fried. And we cook it over medium heat, when you see that the peanut is cooked you start adding ¼ cup of evaporated milk, and you leave it until it reaches its thickness and voila, you have prepared the peanut sauce.

Ready the fried cabrilla and the peanut sauce, you get ready to plate your delicious lunch or dinner. You place the cabrilla on your plate and spread the peanut sauce over it, as much as you like.
