Ingredients

  • 4 large pieces of chicken breasts (can also be chicken thighs)
  • 3 mugs White rice
  • 4 cups water
  • 1 cup peas
  • 1 cup corn shelled
  • 2 carrots, diced
  • 1 cup ground yellow pepper
  • 1 large onion, diced
  • 1 bell pepper, julienned
  • 3 tablespoons ground garlic
  • 1 cup of black beer (ideal if it is Cusco beer)
  • 1 cup ground coriander
  • 1 cube essence of chicken broth
  • 4 tablespoons oil
  • 1 pinch of salt
  • 1 pinch of pepper
  • Cumin to taste

Peruvian Chicken Rice Preparation

  1. Let's start preparing this delicious recipe for Peruvian chicken rice by cleaning the chicken pieces of any rest, wash and dry. Then season the chicken pieces with salt, pepper, cumin and garlic.
  2. In a big pot, pour in the oil and let it heat well for a few minutes. Add the seasoned chicken pieces and fry the pieces until golden brown but not completely fried. Remove them and keep them warm in another covered container.
  3. In the same pot with the remaining oil, include the onions, the yellow pepper and the chicken bouillon essence cube. (In case the remaining oil is burned, remove it and replace it with another). Sauté well until you see that the onion is golden brown and immediately add the crushed garlic, red pepper, salt, pepper and coriander, previously smoothie with ½ cup of black beer and a cup of water or preferably a cup of chicken broth to better adapt the special flavor of the chicken. Fry the entire mixture over low heat for a few more minutes, observing that no ingredient in the pot burns.
  4. Let the dressing cook for a few minutes and add the reserved chicken pieces, in order to fry them completely together with the dressing and then add the remaining half a cup of dark beer.
  5. After a few minutes, observe that the chicken pieces are completely cooked. Remove and reserve in a covered container. Then add 2 cups of water, the chopped carrots, the corn, the peas and the rice. Stir well and cover. Lower the heat and allow the rice to absorb the water and become completely grained for approximately 15 to 20 minutes.
  6. Observe and verify the grain of the rice. Then include the chicken pieces and the julienned pepper over all the rice and cover the pot again for about 5 more minutes.
  7. After waiting the last 5 minutes, check that the chicken pieces are sweaty. And ready! It's time to enjoy this delicious Peruvian rice with chicken.
