Whatever its name, in my opinion there is only one rice with duck in the world, which is and will be my favorite Peruvian food in the north of the country, and every time I travel to Chiclayo, I prepare it together with my aunt Julia, who She is also the author of this traditional Chiclayan recipe.

It is a family recipe that, despite the years, maintains its originality in terms of the ingredients it contains, such as Chicha de jora, Ají amarillo and coriander (coriander). Ingredients

  • 6 duck pieces (can be pieces of duck thighs or breasts)
  • 3 cups of rice
  • 1/2 cup of oil
  • 5 garlic cloves, minced
  • 3 tablespoons of Yellow pepper ground
  • 1 large onion, minced
  • 2 chopped peeled tomatoes
  • 1 bell pepper, chopped
  • 3 tablespoons minced garlic
  • 1/2 cup ground coriander
  • 1 cup of peas
  • 3 cups of water
  • 1 corn shelled and cooked
  • 1 cup of black beer
  • 1 cup of chicha de jora
  • 3 yellow chili without veins
  • 1 pinch of pepper
  • 1 teaspoon ground cumin
  • Salt to taste

Preparation of rice with duck

  1. Let's start preparing this exquisite recipe, washing the duck pieces very well in water and then drying them. Then season the pieces with salt, pepper and cumin all over the place.
  2. Bring the oil to a simmer in a pan and then brown the duck pieces with the hot oil.
  3. Once the duck pieces are golden brown. Remove them to another container to reserve. It is not necessary for the duck pieces to be fully fried, much less cooked. Remember that they will be cooked in the pot along with the rice.
  4. The remaining oil from the pan, pour into a large pot where the rice will be prepared. Add the chopped onions, the ground garlic, the yellow pepper, the chopped tomato, and the panca pepper and fry for a few minutes. Add the blended coriander, the peas and cover the pot with its lid and let the mixture sweat for another 5 minutes over low heat. Include 1/2 cup of hot water so it doesn't burn and cover the pot again until simmering.
  5. When you see that the cilantro is fried, it is time for you to introduce the duck pieces to the pot, adding the cup of Chicha de jora, a cup of dark beer, the rice, the chopped pepper in strips and the yellow pepper cut into slices . Mix the combination and leave the pot covered for about 15 more minutes so that the flavor is concentrated in the duck pieces.
  6. Remove the cooked duck pieces from the pot and put it aside in another covered container. Add the cups of rice, the shelled corn, the peas and the carrot to the pot. Only if it is necessary to add a few cups of water to bring the water level slightly above the rice. Shake well and cover. Let it cook for at least 10 more minutes until the rice is well grained.
  7. Test if the rice has the desired flavor, add the salt to taste and the peppers. Stir well and let the rice be completely grained for a few more minutes. We will know that the rice is ready when we observe that the water has been absorbed.
  8. When the rice has reached its exact cooking point. Turn off the heat and add the golden duck pieces that we had reserved over the rice. Leave it covered for another 5 to 10 minutes so that the duck and rice together adopt the unique and traditional flavors of this recipe. And ready! You can now enjoy this delicious rice with duck, ideal as a main dish and you can serve it together with a rich sauce of Huancaina u ocopa. Enjoy it and enjoy yourself!

Tips for making a delicious Rice with Duck

In case of not getting the Chicha de Jora preparation, you can replace it by adding the juice of half a lemon and half a cube of Maggi chicken essence.
